Strange New Worlds is contradicting previous StarTrek, even if rationalizations can be conjured to explain said contradictions.
The command gold/yellow is now more of a mustard tone to put it more in line with how the color appeared on TOS.

I love the way Anson Mount looks in that uniform. So, I'm in. Okay, they could put him there in a yellow potato sack and I'd love it.
(I know I'm being shallow but hey, I'll be watching the show for Pike, so there's that, he's my focus, I can't help it, Anson Mount is just so handsome and I'm so thrilled for him that he's getting his own show and ship and crew.)
I have to see them in action, but I think the SNW uniforms are going to rate pretty high up on my list of uniforms.

He is a damn fine handsome man, without question. I’ve seen many I interviews with him over the years, going back to the early days of Hell on Wheels and he always seemed like a very down-to-earth straight shooter kind of guy. Totally professional and just a kind-hearted individual. I honestly don’t think they could have picked a better actor to play Pike.Hey, he is very hot, so nothing wrong with that.
Plus his version of the character on Disc was ridiculously likeable, we can only hope this continues into the new show.

Um... since we haven't seen the show, we don't know if they "serve any specific narrative or logistical purpose." We won't know until the show premieres and gets some episodes out for us to see. Besides, they are serving the same purpose as Michael Burnham being connected to Spock and Sarek, to sell subscriptions to people who like nostalgia.
...and serve as a 'hook' to catch their interest.
New, more TOS Enterprise and uniforms make Eddie happy.
