The SNW have been wise to recognize from the outset that you can't really unwind the impact of TNG on the franchise. Two generations of viewers have grown up with the 24th century Trek environments as their touchstones for what the "Trek universe" is like. These producers have backed up from that era in important, meaningful ways, but to really recreate TOS would be a mistake.

In the 80s when TNG hit; they were reusing the ST:TMP film sets (and even shooting some scenes with/in wide-screen format with an intent to crop to 4:3).
But now, with HD/4K and everything in some form of wide-screen format. any modern production needs sets that accommodate, and look good in that format so yeah, all the sets are going to be larger in scope to fill the screen.

Federation OSHA rules.If I have a issue with the SNW sets it wouldn't be so much the size but how many lights are everywhere on the ship. Discovery is basically pitch black and with SNW everything is lit like a Christmas Tree. Do you really need light fixtures in the steps on the bridge and transporter pad? It seems fine to have one wall that isn't a light fixture or computer panel.
