Pike's hair is what happens when your franchise has so many bald captains! It was a matter of time they would go the 100% reverse option on that idea.
Don't forget Saru was Captain and of course and Captain Robau. Most people don't know this but Picard and Sisko both shaved their heads because they dreamed of one day being as cool their childhood hero Captain Robau.

I'm assuming after the hasty end of SNW we'll probably get more such books, now with added lore about how things transitioned, style-wise and crew-wise, between SNW and WNMHGB
