I say name drop Nog as captain of his own ship and just never reveal his fate. Let him still be out there, somewhere, indefinitely.
IIRC they built the Enterprise sets to a much higher quality than the Discovery sets, which is when the speculation about a series began.
Pretty sure those Discovery corridors will stand in for every Federation ship until this version of Trek dies out. By the end they'll have an inch of paint on them.
I loved Babylon 5's "took a one man ship and went exploring beyond the rim" way of acknowledging actor deathsand wish Trek did something similar with Spock Prime instead of an offscreen death. Although Iiked how the movie dealt with it regarding Quinto's Spock, having him live on fate unknown seems more fitting for a fantasy world like Trek.
Actually, a DS9 follow up without Sisko, Odo and Nog would make sense. Sisko is with the prophets and Odo is with the Founders, bringing them back would be a stretch anyway. And Nog could be off commanding his own ship by now, there would be no immediate need for him to be present on DS9.
Thinking about it ... as much as I would like it to happen, some 25 years later show of DS9 could be problematic. Why would anyone from back then still be there?

IWhat they said was that they were able to employ some newer construction techniques, like the use of metal in some places, that hadn't been available to them before.
About three-quarters of the Enterprise bridge set was constructed on stage - the front part including the main viewer was CG.

Strange new worlds, while a familiar term because it's named in due part of Kirk and Picard's opening narration, is a more creative title.
Speaking of Kirk, we're told multiple times that his 5 year mission was historic. If Pike does far cooler things in this show than Kirk ever did in TOS, what would make Kirk's 5 year mission historic in-universe? Did Kirk just have a better PR/marketing manager?

There's no reason to believe that Pike also had a "5 year mission". He was just commanding the Enterprise. I suspect a five year mission has very specific set of defining parameters, which no one has ever really described. Thus, it's up to the creativity of the new writers to do so.
As I recall, early drafts of TNG had them on a 20 year mission, but this was never really brought up during the series.
Even Kirk's "five year mission" had a pretty broad parameters. Exploring one day. Giving Medical check ups the next. Transporting diplomats the next.
Impossible! Nobody is ever going to be more cooler than Kirk, Spock and McCoy. They didn't become legends just because of the missions but because they were the coolest dudes the fleet ever saw with the most rocking entourage around in Scotty, Sulu , Chekov and Uhura. Starfleet crews wanted to be them, space aliens wanted sleep with them. Even Admirals and Federation dignities asked for autographs when they would return home for visits. Together they put the Star in Starfleet.

Kirk's "five year mission" was no different than the Cylons' Plan on nuBSG - that is, Roddenberry wanted to put together a dramatic monologue for the opening credits so he made up something that sounded grand. You can see the memos back and forth between him and Justman as they add and subtract stuff from the speech.
In fact, the format of the show as it was pitched and explained to people working on it was that Kirk's job was like that of a colonial naval commander from the previous century - support outposts, chart new seas and territories, explore, serve as the representative of his government to lands so distant that timely communication was impossible. So on and so forth. Oh - and defend the realm.
