Is there room for Sybok to appear in this season given what we know of Season 2 so far? It seems a bit much to have an overly dramatic side view headshot of him in Season 1 only to not have him show up at all in Season 2.

That sinister pirate captain is supposedly coming back, so there's probably at least a mention of Sybok in one of the episodes.
I would imagine it's the one mentioned involving T'Pring.

I noticed this only a few days ago but it seems that (since season 1) there have been paintings of two starships in the private side areas of the crew lounge on the Enterprise on #StarTrekSNW. Port side: Cardenas class , starboard side: Shepard (?) class .

Well, sort of. Chekov was brought onto the show because of the popularity of The Monkees, Davey Jones in particular. Other than, say, LGBTQ reasons (of which many other characters in CBSTrek have that covered), Ortegas isn't really supposed to represent anything or anyone specific. Is that a problem, though? Not really, at least not to me. But I think she would be the first character to be eliminated if they needed to cut some of the actors (and Hemmer doesn't count because Bruce Horak is returning in a different role) because any random person can fly the ship and have no character development.

Plus, we really can't compare TOS to SNW in that department. SNW is very much supposed to be an ensemble cast, while TOS primarily focused on Kirk and Spock (and sometimes McCoy.) But as ensembles go, Ortegas is only getting as much development as Mitchell, who is definitely just a background character.

Rios is both Ortegas' ancestor and her descendant. The Rios/Ortegas family is an ontological paradox
