Kirstie Alley's Saavik is absolutely gorgeous in TWOK, and I carried my crush on Alley over to Cheers when she joined that show.
I definitely had a crush on Tasha Yar when TNG first premiered, although I later came to appreciate both Deanna Troi and Beverly Crusher after Denise Crosby left the series.
Jadzia Dax was my definite crush on DS9, and how could you not find Jeri Ryan's 7 of 9 stupendously attractive? Terry Farrell and Jeri Ryan both seem to be really cool people from following them on social media too, so that definitely adds to the crush factor.
But my #1 Star Trek crush is Emily Banks as Yeoman Tonia Barrows. She just lights up the screen and makes the most of her limited screen time in "Shore Leave." I just find her charming. I still use Barrows as my screenname on Star Trek Timelines, and when I played a ST role playing game with some friends years back, the character I created for myself was a nephew of Yeoman Barrows (the RPG took place in the movie era, so my character was a young doctor in his early 20s who'd been mentored by Dr. McCoy).
