It think Korby woos her and it becomes one of those rebound kinda relationships.
Chapel eventually develops feelings for Korby but never really loves him the way she loves Spock.
Thinking about the way it is played in TOS, it follows through that she's more concerned as a friend rather than worried as a lover, about where Korby is.

More like Kirk speed. Dude falls in love at the drop of a hat.
He fell in love with the android Rayna Kapec in about one day's time.
Dramatic relationships happen at dramatic speeds? I am shocked, shocked I say.
In Kirk's case, I think it should be more "fall in lust". I don't think love had much to do with anything outside of Carol Marcus or Edith Keeler.

I grew up with TAS and TOS reruns, then a teenager when TNG hit. But I have to say that this series has approached TOS for me as far as wanting to watch episodes again, have fun and also allow me to think sometimes about what's going on. It's really close to TOS for me as favorite Trek series.
There was also "Ruth", but nobody knows anything about her, not even her last name.

Didn't he also know the prosecutor in his Court Martial, Areel Shaw?

Although to be fair "The Measure of a Man(TNG)" also features some gratuitous conflicts of interest that wouldn't fly in most real world courtrooms. Captain Philippa Louvois oversaw Data's hearing regarding his personhood and sentience and she'd had a romantic relationship and friendship with Data's then-current commanding officer.
IIRC she also was responsible for the court martial/hearing after Picard lost Stargazer.
Even more reason to treat Trek's judicial system that we see as a creation of dramatic fiction because, yeah, it doesn't hold up too rigidly under close scrutiny.
He mostly just like the horse ranch she owned but he did love those days of looking at her silhouette from a distance and listening to her talk about him rattling around the kitchen from their bedroom.
Also: Idaho. At least there are mountains and scenery, unlike Iowa.
Do we know how Kirk and Carol were together prior to David being born. I mean it sounds like it was really much an on-off again relationship.
They apparently met while he was at the Academy through Gary Mitchell.
So if it was before Kirk was assigned to a starship, they may have had a lot of time to spend together.
