McCoy is seen drinking alcohol once or twice when on the job in TOS when he's really not supposed to be doing that (unless we assume it's synthehol). If there's a 1701 crewmember who's been hoarding latinum secretly for non-Federation use, it would be him.

Per Data in TNG S6 Relics there was no such thing as Synthhol in the 23rd century.
