Sherlock Holmes once died in a story. When doyle decided he needed him back Holmes "undied."
It's a long standing habit in fiction for writers to change things.
Still not on the level of what we have seen here. That includes the Jurassic Park example people have brought up. SNW has literally changed established back story without explanation. There is so much to list at this point I don't even want to type it all out now.

But as others have said people can keep their own head canon if they desire. What's done is done. I choose to think of SNW and Disco as just an Alternate reality or fan films. There is some good stuff there. Don't dislike it all. But they will definitely never be favorite Trek series of mine with both being at the bottom with just Lower Decks below both of them.
