I guess it's because the named/few lines here and there extra's from TNG did a lot less than all the bridge crew we see in Discovery, who are a bit more fleshed out and have more depth. So it makes people curious about more.
We all have a favorites and tend to make them a bigger deal than they actually were. Sulu, Uhura and Chekov come to mind. There are even people wishing for more from a two timer like Riley. Who in only two appearances had more background and personality than Sulu and Uhura combined.

I never knew they changed Data’s uniform from blue to gold but it makes sense, I can’t imagine him in blue at all.

I already knew they basically switched the red and gold uniforms from security/engineering to command and vice versa because red was more flattering on Picard and Riker. I recall reading that, according to some (probably not very scientific) study that people are automatically perceived as more attractive when wearing red. Although Shatner pulled off the gold/green look magnificently.

Indeed, yes.

Pretty sure that was just a reused shot from Season 1 or 2

Funny observation about that from Jorg Hillebrand over on Threads: the shuttlebay hangar door is actually closed in that shot. The running joke until the ship went to the 32nd century was the hangar door was always open or seemed to be.

My issue has always been that the stories they chose to tell with these characters are the dullest, least interesting stories you can do.
If you're going to go to the trouble of puttinger Owo and Detmer in cast photos and putting them on con panels maybe, I dunno, actually do something with them.
But they do get given stuff to do. Owo and detmer were a big part of the mirror universe arc during season 1, detmer had a PTSD arc in season 3 they also helped save the ship in season 3, they all went on away missions in season 4. Discovery is more akin to TOS were it focuses on core characters. Rhy, Detmer and owo are the chekov, sulu and Uhura's of Discovery. And again, I know more about Detmer, Owo and Rhys than I do about Chekov, sulu and uhura in TOS. Even in the movies, they continued to play second fiddle to Kirk, Spock and Bones.

Either Calypso is, as I've always suspected, simply a dream of Zora's (she says here that she dreams a lot), or it takes place in the alternate future where the crew are all dead.

Got to be a dream. In addition to the ship being in the 23rd century configuration, in Calypso everything is clean, they have consistant power and the Dots are there doing maintenance. In the last episode power is about to fail for good, and everything is dirty.

I was wondering if it's another alternate timeline where none of Discovery's crew survived travelling into the 32nd century, and the ship itself has been largely adrift and purposeless since it arrived; hence the lack of refit.

Are they in cast photos? Here's an official cast photo for DISCO5

Other official cast photos from past seasons are also of the opening credits actors.
How do Cons works? Are all the guest official reps of the Studios? Sometime you get a Guy Fleegman

Got to love that. "This guy, who's turned up just this year for ten episodes? Main character. You guys, who've been here since day one? Secondary. No episode focus for you. Half the viewers don't even know what your names are."

They been doing that since day one. Pretty sure Anson Mount was a Main. Same with Yeoh.
Credits aren't based on the merit system or time served.

True. HELL, LAVERNE & SHIRLEY STILL HAD SHIRLEY'S NAME IN THE TITLE FOR A WHOLE YEAR AFTER CINDY WILLIAMS LEFT THE SHOW. By 1982-83 the series was just Laverne by herself with - occasionally - Squiggy as a supporting character.
