Why would any individual character dying mean they were particularly elderly? The same reference could be construed to assume he died particularly young for a Vulcan, especially as we know he had a complicating factor (Bendii syndrome).

Because humans use common reference points, and Sarek's presentation was as aged and dying.
Those are the markers humans will reference and we don't have other Vulcans to reference.
It makes me wonder, if the Betazoids retained the BIA (Betzoid Intelligence Agency) while still being Full Fledged members of the UFP, does that mean every Member species of the UFP would retain their "Species Specific" Intelligence Agency while being a Member State of the UFP?

That would depend on Vulcan emotional control being genetic rather than the product of training and disciple. Evidence seems to point to Vulcans learning to control their emotions. They are not born with emotional control. A Romulan raised by Vulcans would probably have the same control over emotions as a Vulcan. A Vulcan raised outside of Vulcan society might not be all that different than a human or a Romulan.

I'm not sure that quite washes the way you think it does. "Justice" is a strange episode, and not one I would welcome for Lower Decks to explore, any more than Code of Honor.

If Sarek was frail and ailing in "Journey to Babel", when he was 100 years younger, that would imply that Sarek was always unusually sickly. Especially since Spock was about Sarek's age in "Unification" and if memory serves, he didn't look frail or ailing at all. Or perhaps Spock was just unusually robust. I haven't seen "Amok Time" except the once, but wasn't T'Pau supposed to be an elderly Vulcan at the time? Did she look frail?
Lower Decks is horny as fuck which is why the planets I mentioned are surprising in their lack of visitation. I wouldn't expect an episode about them but just a quick glimpse in a flashback or holodeck or something.
Code of Honor is left out for a very different reason.

I think their omissions are along the same lines, but that's just me.
We can always come up with reasons something isn't as it appears to be. I have done that all the time as a fan, and often have great fun doing so. But there's an obvious appearance with "Justice". And not-too-long coming after the blatantly racist "Code of Honor" it isn't hard to see it as "paradise equals innocent white blondes."
Fun episode! The 3 Betazoids were super funny. I really really really like T'Lyn. As an occasional Tarot reader, I got a kick out of the "it just means rebirth" bit.
I assume it comes from Sarek being "middle aged" in Journey to Babel. McCoy ask's why he would be retired at his age, which was 102. He has a touch of grey in his hair which implies middle age. Plus the adult son.
