It is possible; nothing about Nyota's sexuality has been established. We know that her Kelvin Timeline counterpart had a relationship with Spock (which in SNW would just feel creepy!), but that doesn't preclude her Kelvin Timeline self from being bisexual or pansexual. And the sexual orientation of her Kelvin Timeline counterpart tells us nothing about her Prime Timeline self.

I see Uhura the character in SNW as the same age as the rest of the crew even if the actress (celia gooding) is much much younger,
TOS Uhura (Nichelle Nichols) would have been 90 this year, she was in the same age group as Nimoy, Takei and Shatner and that is how we need to see SNW Uhura too,
in the MCU Elizabeth Olsen is much younger than Paul Bettney and they make a cute couple as Vision/Wanda.
I have seen some shot with Uhura and kirk sharing a drink from episode 6 and while I know wesley in about 18 years older than Gooding, I still think of the kiss they will have in TOS and it is not creepy.

Lastly I thought Uhura for now in SNW was the LGBTQ one because I read a star trek piece on the advocate that features the lgbtq actors from discovery and the piece said, Trek is commited to casting lgbtq actors in lgbtz roles. I will have put my money on uhura been bisexual and not chapel since Celia is the only actor I know so far that is LGBTQ plus in the cast. She identifies as bi-sexual and non binary and uses the pronouns they/she.

Chapel romantic story arc may follow many hollywood trope we see in female characters of the of the past. they go through 3 stages.
1. date a guy she really likes that does not work out (spock)
2. gets angry and hurt with men and date women due to the heart break
3. finally realises she is not a full on lesbian and gets engaged to roger korby.
I have seen this trope in many tv shows
