Both of them provided voices to Star trek Online 4 years ago. Nana sounded the same as she does here in Lower Decks, but Shimerman sounded different.

Who says it's well known in LDS? The characters are always mentioning shit that no-one should technically know. I wouldn't take that as being well known, just meta/4th Wall writing.
This is one thing they couldn't know from official mission reports, unless everyone knows. If lower deck ensigns on an unimportant ship know what none of the DS9 command crew knew and HQ didn't acknowledge or deny, then it seems that Bashir or another Niner exposed them to all of SF between DS9 and LDS.
 
No one actually mentions that the USS Enterprise NCC-1701 appeared in the episode with a TOS looking neck and nacelle pylons:

And we also saw this TOS style Enterprise in Star Trek Prodigy. I know it's hard to accept it, especially to the slightly more stubborn Star Trek fans who often take things literally but I'm 100 percent sure that at the end of Star Trek Strange New Worlds refit will happen and SNW style Entrprise will get neck and nacelle pylons of TOS era.

After strong criticism from the audience, the producers want to synchronize at least an important part of the visuals. And what we saw in Prodigy and Lower Decks is just preparation.

Please don't mention last episode of SNW. It was a reality that will never happen. We know how Enterprise D looked in last two episodes of TNG (All good things episodes) and it never happened. Same thing.

They've said there's supposed to be a refit between SNW and TOS. Whether we see it, or it's hinted at, or not, will only become clear when SNW is ending, probably, so it could take years :D

It's not just the neck and Pylons, that's the entire TOS design.

And Picard showed it won't in Season 1.

There's no one at Paramount enforcing a consistent art design between the shows.

We were kind of really under the gun to make it a [?] step before the Jeffries Enterprise, so Scott Schneider and I kinda did that whole kind of thing where there would be a refit before Captain Kirk took over the Enterprise, and so it was things that you would remove and then it would be that Enterprise, and so we had it and it got approved and it got sent off [...] we didn't see the ship until it aired on Discovery. And it came out and when it passed by it had the TMP angeled struts, and we're like "what was that?"

Which? I can't remember any such examples aside from 31...

The SNW Enterprise is not going to be refit into the TOS Enterprise.

Might not get refit. Might get refit. No reason it needs to, no reason it couldn't. Guess we'll find out when SNW ends!

Not good example. Look at the interior of the Enterprise in Ephraim and Dot cartoon. Totally TOS.

Except for the corridors, which were SNW or DSC in design.

I would suggest that "Ephraim and Dot"'s visuals should not be taken as a diegetic depiction of the Enterprise, anymore than we assume that there's an invisible orchestra that plays mood-appropriate music during the live-action shows.
