It's what is selling right now is familiarity. It's what I see asked after when new shows or seasons are announced. Familiarity is driving shoes.
How?
I do hope you are not putting me in that category because I have not watched either show, aside from one episode apiece to see if it was for me. Spoiler alert: it wasn't.
However, what I do want is consequences. I don't enjoy the "warping off to a new adventure" with no consequences to the characters. I don't like the idea that everyone is perfectly safe and will never die, no matter what. That doesn't mean I want a constant blood bath, but I also want there to be a tinge of danger and that choices mean something even if I know the main characters are not going to die. Shows like Brooklyn 99 do this perfectly well.
Why not? TOS is fairly untapped in terms of time spent in the era so having a TOS show would be fine. It doesn't take anything away from the original and explores an era that I think allows for some fun, while being fairly familiar to a large chunk of the population, e.g. not Star Trek fans.

For starters T'Pring. The producers even admit they broke continuity with her. Shes a character I can do without. Spock is best left without her...imo...
