I thought the Enterprise had multiple sickbays, or at least a large sickbay complex the parts we saw on the TV shows were only a small fraction of.
That depends on which Enterprise one is discussing.
Obviously the TNG one was massive compared to TOS, just because of the ship scales and the number of people needed to be treated on a daily basis.

These are mostly Trek Fan depictions, but considering our persnickety attention to minute detail, they are probable accurate down to the square inch. :techman:
 
IIRC, the FJ blueprints did show multiple sickbays and multiple transporters and even multiple bridges, for that matter, but is considered non-canon at worst, soft-canon at best. We can assume that the larger Enterprises had redundant services like this, but real-world budget limitations forced them to use the same set for all of them. TOS did make reference to transporter room numbers, and there is canonical evidence that there were two engineering rooms, one in the PH, behind the impulse engines & one in the SH behind the shuttle bay, controlling the warp engine systems.

The Enterprise D supposedly does, though I don't think that's ever been reflected onscreen. The closest we get is seeing sickbay evacuated in Generations, suggesting that it would be in the stardrive section. Curiously, though those evacuated are just sent to crew quarters rather than the saucer's sickbay or a triage area in a cargo bay or whatever.

I'm not sure anything's been said weather the Enterprise E had more than one sickbay. I suppose it's possible.
 
Rick Sternbach's team worked in multiple first-aid/triage-type stations scattered throughout the ship on the Enterprise-D blueprints, as I recall. A sensible measure.

Is the 7+ months to shoot 10 episodes timespan typical for modern Trek?

Discovery Season 1: around 9 months to shoot 15 episodes.
Season 2: Around 8 months for 14 episodes
Season 3: Around 7 months for 13 episodes
Picard season 1: Around 5 months to shoot 10 episodes.

So compared to Picard it is a bit longer, but you have to consider that Covid precautions are slowing down production.
