Maybe that was the POINT of the Zaht Vash orchestrating the Mars attack. They weren't concerned about the situation with Romulus (it wasn't even a consideration one way or the other). Well, I guess Starfleet would like you as long as you're a well-behaved yes man who will obey all orders even if it costs you the life of your son. Honestly Riker should be giving an FNN interview and he'd get far more sympathy than Picard did (since I think the Fed citizens can relate to Thad more than to Romulan refugees).
In a world where people can get meat that is essentially indistinguishable from the real thing - guilt and cruelty free - you don't think that a lot more people would become squeamish about killing animals for food? It seems to me the social norm would flip, where "vegetarianism" would be the default for humans, and eating meat would seem to be the weird thing.

I find the idea that organisesd religion on Star Trek Earth loses its political power and theocracies are a thing of the past a good thing, but I would hope humans are diverse enough to accept other humans having religious or non religious beliefs as long as said beliefs are not harmful to others. I expect Vatican city still exists, the Dala Lama is still around and Islamic pilgrims still travel to Mecca even if its just to maintain ancient traditions. Today some card carrying atheists enjoy the Christmas season, they even buy presents and listen to carols! Gasp!And religion is already said to persist in both ENT and TOS so it's ludicrous to believe that spirituality or even organized religion will be all but extinct on both Earth and in the wider Federation just 100 years after Kirk. Religion - whether or not somebody likes or agrees with it - has been ingrained into human genetic makeup for millennia if not longer and just a couple of hundred years of warp drive and cures for most diseases isn't going to change that.
