It would be interesting from a historical point. There is almost a century between the Enterprise NX-01 and the NCC-1701. Filling in what happened, if done right, can be very entertaining. Yep.

How about a Scotty show. It can cover his tour on the USS Hasselhof when he was a trickster and troublemaker, before he got his act together on the Enterprise.
Anything fun about that concept was finished after ENT came out and set the past in stone = - the original fun, IMO, about a prequel would have been to bridge it backwards to some real atomic age, 50s and early 60s style aesthetics and tech, that truly looked pre-TOS, but with modern filming dynamics, like any good period piece. Retro doesn't have to look cheap.
I think the asymmetrical collars, bright colours and spaceman shoulders give the uniforms a cool retro-futuristic vibe.

Is that a good thing? I keep hearing how all the design updates were necessary because the show has to look modern and futuristic. If they’re going retro, give me 1960s retro, not Buster Crabbe retro.
I wish that ultimately, the DSC uniforms end up being a dress overcoat rather like the WoK uniforms, with TOS uniforms underneath, and that a later retcon reveals that underneath the monster maroons, there were division tunics.
Could you imagine wearing something with an "asymmetrical zipper"? It would throw my entire equilibrium off, like a cat with no tail.
No retcon needed, the turtlenecks under the monster maroons are already division colors. You just need to move the badge from the jacket to the shirt, which is an option not ruled out by what we see.
Retcon? We see Kirk with his jacket off and a white turtle neck underneath. The division colors were pretty much part of that uniform from the word "Go."
