Okay, must have ignored/forgotten that - but that doesn't actually explain why Spock doesn't talk to either of them or why Burnham isn't angry at Sarek.
The episode was "Lethe" (DSC). She was angry at him when she found out, but then they began working toward an understanding from there.

Obviously, it's yet to be clarified (and most likely will be from here), but Spock's estrangement from them could have something to do with the fact that Sarek melded with Burnham to save her life when she was a child, leaving part of his katra with her, an intimacy that Spock would never get to experience with his father in life, per "Unification II" (TNG). Spock was always deeply insecure about his father's acceptance of him, as we can see not only from that episode, but from his "secret pain" as depicted in the fifth film as well. Ironically, despite Sarek choosing Spock over Michael, to young Spock it may rather have seemed that he chose her over him. There might be more to it, of course, but we'll see if that's at all in the ballpark...

Again this really sounds like small universe-syndrome and retconning TOS facts to match with Burnham's background. Then again, this whole angle with Spock's human step sister etc doesn't ring right with me.

Burnham is NOT Spock's step-sister (as far as what we know as of now). She's his foster sister.
Step sister would mean she's the daughter of one's stepparent. Amanda and Sarek are neither Spock's step parent nor Michaels'.

I think the word used in early episodes was 'ward'. Which is olde worlde for foster. Although given that they raised her from childhood, they are adoptive parents in all but name. Burnham certainly seems to view them that way.

As to Sarek not speaking to Spock for years, please go rewatch TOS S2 - "Journey To Babel" to see it's not a reton. Amanda tells Kirk:
AMANDA: You don't understand the Vulcan way, Captain. It's logical. It's a better way than ours. But it's not easy. It has kept Spock and Sarek from speaking as father and son for eighteen years.

KIRK: Spock is my best officer, and my friend.

AMANDA: I'm glad he has such a friend. It hasn't been easy on Spock. Neither human nor Vulcan. At home nowhere except Starfleet.

Yeah, Sarek hasn't spoken one word to Spock in person since 2249, the year he entered Starfleet Academy. So if DSC honors canon Sarek and Spock can't even share a subspace message with one another unless Spock contacts his father and he cuts off the transmission out of an unwillingness to talk.

Yeah, in hindsight, that line is pretty specific.
At the time it seemed fairly nonchalant, but Amanda apparently knew that the two of them had actually talked to each over those 18 years but it had never been as a Father and Son.
It was always as a Star Fleet Officer to a Vulcan Ambassador.
Which makes sense as Sarek is well known throughout the Federation, they must have crossed paths occasionally.

If Sarek and Amanda were Burnham's adoptive parents, they would have legally adopted her; raising her does not by itself make them her legal parents, which is why they are her Foster parents.

Also, if they'd adopted her, her full name would likely be Michael Grayson, as would, technically, Spock's.

Sarek pretty clearly wanted Spock to learn to emphasize the more Vulcan side of his heritage, most likely out of expectation and as a 'tool' of acceptance more than anything else, but I don't think that had Spock decided he wanted to take on Amanda's last name legally and officially, neither Sarek nor Amanda would have objected too strongly.

Well, formally they use the "Son of..." system as per Klingons and the Scandinavian cultures of Earth, albeit the latter abbreviated these to "...sen" or "...dottir"

Presumably Vulcans are big fans of Doctor Who and "Sareksen" would be too easily confused with the glove puppet monster from Terror of the Zygons.
