It is a lot easier now. I had to do a reinstall after a disastrous Ubuntu issue, and it only took 20 minutes from start to finish, and looked like the image above (save for the classic start menu, and Rainmeter clock).

I use the "Classic with Two Columns" option, but you can choose from several different start menu styles, even XP and 7.
I wouldn't want to run this program in WINE even if it was available to do so. However running a Virtual Machine is something I hadn't considered, I'll have to ponder on it. However I suspect I'll be running Windows on my Mac, probably from an SSD attached through Thunderbolt.Have you looked to see if it runs under WINE? Wouldn't need Windows at all in that case.
Running a Windows VM would also be an option if you can tolerate the performance hit.

It's not that it wouldn't work in VM, I just don't want to take the chance. I know that's not really rational but this event I'm covering is huge for me and could change my future.You say "very critical" as if it wouldn't work in a VM. I don't understand.

Still running into issues with my mom's laptop. Now it's getting to the point where she isn't able to log in. Meaning she can't see the log in screen. Had it fixed before (dealing with the log in issues), but now it's come back and led up to this. So for now, she's laptop less. Can't do anything on my end, as it's above my pay grade.
