I would really like to see what happens to Lorca and how he handles things after the war is over. I think that would be an interesting story. He can get away with things now because of the war but what about when he can't?

Never. Burnham is damaged goods and has demonstrated extraordinarily poor judgement in crisis situations. She'll be lucky to reach Acting Ensign by the end of Season 2.

She'll become temporary captain when everything goes to shit, and then end up being offered proper captaincy, but turn it down.
That's people who broke-down after their evals.
Not people who were psychologically damaged during them.
Who would that be? When have we seen these evals?
I don't think she'll be captain of the Discovery. I get the impression that her arc will be something like... she'll do something to end the war this season and save the Federation, and then get pardoned by Starfleet - maybe start back at Ensign. And then we'll have 'Lower Decks' the show until the final episode where, depending on what season it finishes, she'll either be offered command of a different ship or we'll see a flash forward of her commanding a different ship.

That's an awfully factual statement that is likely not very supported by evidence.
It's supported by reality, if you want to ignore that no skin off my back.
So no one in the history of the world has ever risen to "command" while having psychological problems. Riiiight
I work in the mental health field. I'm aware that individuals can function in many different jobs, roles and sections with a wide variety of trauma based disorders.
The reality is the human being is capable of functioning in very extreme situations and surviving much worse. I'd recommend Viktor Frankel's book for more on "reality."

Potentially capable does not equal allowed, which would know if you had actually researched the subject.
Since Starfleet isn't the same as the US Military, I will not apply the same standards.

In fact, decades of psychological research indicate the resilience of the human species -- that given a reasonable alternative and a chance to emerge from trauma, people will leave it behind. It is now pro forma when there is a tragedy—a hurricane, a mass murder—to move in a team of grief counselors. But psychological research studies have shown time and again that there is no value-added for doing so. People do just as well recovering—and most do overcome such traumatic experiences—relatively quickly whether or not they receive counseling. This isn't to say that we should leave every human to their own devices. It is to say give people room, resources, and opportunity to live a full life after bad things happen, and they will generally take that path.
