I think Kirk's short sleeve uni isn't terrible and I also think his white-on-gray Admiral's uni in which we first see him isn't bad either. I never have liked the one-piece costumes though, and I wish they had made more use of the colors of TOS - even if the designs themselves changed.Surprised no one has mentioned the drab, ultra '70's, one piece pantsuit style disasters from Star Trek: The Motion(less) Picture.
Funny you should mention that. I am one of only three known humans who actually like the TMP uniforms. I especially like The Shat's short-sleeve "off-duty" uniform. Plus, Nimoy never looked Spockier than in his grey unitard, and Nichelle looked very pretty in beige. The TWOK uniforms were fine for formal occasions, but they never looked like the kind of thing the crew should wear day-to-day.
I thought the rainbow colors one was civilian garb.

I'm amazed that nobody has mentioned the Capellans from "Friday's Child" yet. Who on Earth thought that day-glo pink and turquoise fur boas were proper attire for a race of fierce warriors?

Yeah, it's not a rainbow design. They are the three colors of the three divisions aboard ship (red/yellow/blue). And they're also across the shoulders, somewhat similar to the standard uniform style.
Also, the kid wore it all the time. If it was civilian wear, why would he keep wearing the same shirt all the time?
So it's gotta be some kind of uniform.
But he wasn't in Starfleet, so he wouldn't have any uniform.

Well, since the Capellans seemed to fight and slaughter at the slightest drop of a hat. I could see them wearing something that would provoke their enemies into antagonizing them.
"Sir; those warriors must be fearless and have balls of steel, Look at the outfits they're wearing. It's like they are daring us to make fun of them."
