I'm really looking forward to SNW despite the small universe syndrome. I love the Discoprise, I'm a fan of Mount & Peck (Peck was AMAZING when I met him, he was talking about being so honoured about my letting him sign my poster and being part of that tradition, although I still had to pay the fee

And on a more serious note, being a horseback rider is one of the few concrete canon things we know about Pike, and Anson Mount spent 5 years riding horses on Hell on Wheel, so when you have a character we know rides horses, and cast an actor who rides horses, it makes sense we'd see the character on a horse at some point.
