I mean, McCoy carries Spock's katra in his own body for a while and even in TVH, TFF and TUC he still seems like there's a lot about Spock he still doesn't know and understand (Sybok's existence, for one), so a meld might not impart as much information transfer as one assumes.

Clearly there are different levels to mind melds, else Spock wouldn't have had to do what he did to Valeris to get information out of her.

Isn’t it reasonable to presume the initiator of the meld controls the directional flow of information and it would take a very powerful telepath to override such parameters (something neither Kirk nor McCoy are)?

That was when Spock melded with La'an in S1E4. In that case, they were digging specifically at La'an's memories of her last conversation with her brother, which triggered Spock's good-bye with Michael, which was still a relatively "fresh wound" for him, as SNW S1 began only a few months after Disco's S2 finale.
