What's onscreen is that the ship looks different in different episodes. No "refit" explanation is offered in canon.

And all of this is nonsense and gibberish. Trek is just a make-it-up-as-you-go product that has contained wild inconsistencies since the beginning. And none of those can be wished or argued or explained away to the satisfaction of an observer who doesn't agree to participate in the silliness.
