Geordi mentioned that drones were loading torpedoes into the torpedo bay. They most likely had to wait for that process to be completed.

Well it's not like the Enterprise has a hatch on the side for "Loading torpedoes" from the outside is it? I thought things like that would be beamed aboard
Not in the Prime Timeline. Based on the hot, dull mess that is STID there are 18th century warship-style side launchers mounted on the Kelvin Enterprise.

TNG Tech Manual talks about the umbilical connect hardpoints and resupplying consumables. It would be reasonable to think that includes weaponry.

Don't torpedoes work with antimatter? I thought you couldn't transport antimatter?
I don’t know. But there have been more than a few occasions when they beam torpedoes in and out.
Oh right....
And Ensign Garrovick compared an exploding antimatter bomb to being a multitude of times more powerful than a cobalt bomb from Earth's past.
