If SNW only gets 5 seasons as well

But they wouldn't be able to respect the almighty canon if Pike could say more than yes or no.
It was still ridiculous when they claimed his mind was active normal because if he could make the light blink/beep, he should have been able to communicate in the 23rd century equivalent of morse code.
^^^
But that would make things less dramatic when it came to Pike's situation in TOS S1 The Menagerie as the whole point was to drive home that Pike can't reach out and no one else can reach in.

It's also always bothered me that they never just had Spock do a mind meld with Pike on screen in that situation. But again, lessens the drama.

Then there's the 430 Vulcans on the USS Intrepid. You'd think the Star Fleet Admiralty could find one willing to help Pike communicate... ;)

The show I feel needs to end with Pike's accident and Spock's plan to take him to Talos and possibly even a further flashforward to a memorial service for him post Menagerie. Have Uhura sing the lyric version of the TOS theme like I'm sure she did in some comic at some point.
The thing is if they end it there, that’s the end of the story. There will be no Long Trek with this cast, unless they reverse what happens to Pike or allude that his condition can be reversed. And as you said, we don’t get to see Pike’s five-year mission.

The best Trek finales (TOS, TNG, DS9) leaves the crew’s future open ended. Instead of having them achieve a certain end point (VOY, ENT).

The only idea I really like is Uhura singing the lyrics of the TOS theme, since that theme does in exist in-universe.
They don't have to show the accident
That can be saved for a Long Trek.
I'm still betting the last scene of the last episode will be shot on the TOS set tour bridge, after a "refit"
Why does the Enterprise need to be refitted?

Why can’t it be the crew remembering their time on the Enterprise many years down the line, and select scenes from SNW are re-shot on the TOS bridge? And the SNW bridge is largely Pike’s perspective? Would fit in with an idea to not have the ship design tied to a construct.

It would leave the story open ended to be continued as adventures in Pike’s mind.
and will have the new Kirk send them off to do TOS
Pike handing the keys to the Enterprise to Kirk should be the penultimate episode, not the finale. This is not Kirk's show.

I've been thinking the last scene of SNW should be Spock wheeling Pike to the Talosians after the events of the Menagerie.
Why can't that be the cold open to the finale?
My idea for the final episode is that it tell the story of The Menagerie from the point of view of Pike's former crew, who are all a part of Spock's conspiracy to bring Pike to Talos IV.
Okay, sound good. But again, the best Trek finales leave things open ended so that they can continue having adventures.

Isn't their continued adventures TOS though? Some have got to die or part ways within the next 4 years or so so there's a ticking clock on what they get up to unlike the other shows that had the potential for anything to come next.

Even if it ends with Pike, Una et al warping off to the Enterprise's next mission, 2 or 3 years is hardly the sky's the limit. It's probably best for such a direct prequel to come full circle.

Yep, as far as I'm concerned, the final episode can end with the entire SNW cast on the bridge with Pike giving the order to head to their next mission and that will be a satisfying ending for SNW to me.

I remember Stargate SG-1's final episode ended with the team assembled in the gate room, getting ready to go through the Stargate and embark on another adventure. Granted, part of that was because there were already plans to continue SG-1 in two DVD movies, though the writers said even if that wasn't the case they'd probably end the series the exact same way, as apparently TV shows that have an open ended finale tend to do better in syndication than shows which had a definitive ending to the series. Which granted, is not a concern for SNW at all, but would be a nice touch to tie-in with the fact that this show is episodic in a way not done in modern Star Trek.
