a character I would like to see return in Strange New Worlds

I don't think you'd need aging makeup for T'Pol. It's been 20 years since we saw her. If you go by Sarek as a standard, he was 100 years older from "Journey to Babel" to "Sarek". That's about the same as T'Pol to SNW era.
Vulcan aging is all over the place. For Sybok to be raised as a child with Spock at some point he would be (going by pon farr) born in 2223 and only 64, the same age as T'Pol in Enterprise. Yet he looks way older than T'Pol did at the same age.

Do we know how old Sybok was when Spock was born? Given Sarek's age, he could be quite a bit older than Spock. Decades even.
 
The deleted scene in TFF in which Spock and Sybok reenact the day Sybok left Vulcan implies Spock was a young child at the time, while Sybok would obviously have been an adult. Suggesting at least a twenty year age difference between the two.
