She lives

Yes, she lives! It honestly makes more sense given their hopes for Year One. Her dying isn't going to make it more less likely that she's never mentioned again in TOS compared to moving on and just being a colleague from a few years earlier. I vote for her becoming Una's first officer and having Kirk on casual basis.
 
Una gets her own ship and brings La'An and Ortegas over as XO and CHO. Maybe Pelia too as CEO, .

I'd love this. I'm not sure Pelia's safe to be an unsupervised CEO :D At the end of Season 1 we saw in an alternate realty that La'an became Kirk's first office. It makes sense that Una would get the Farragut instead of Kirk as he gets the Enterprise, La'an is still the first officer and Ortegas goes with them or perhaps takes a very different job - I could see her embracing a test pilot life. Pelia floats on as CEO or finds some entirely new role.

It will be interesting to find out why Una ultimately doesn't get the Enterprise but Kirk does. Una has more experience and knows the ship better. Kirk, in his current state, is an odd choice. Perhaps he does something particularly heroic to earn it.

The mission a different ship is going on may appeal to her somehow (territory covered, goal of mission), or perhaps she takes a stable position (commodore of a station, academy teacher). Maybe she does get it briefly, until the 5YM begins - he might shadow her?

All good possibilities. I feel like they've been setting her up to be a starship captain. She isn't married and doesn't have children often seems to prompt officers to take the more stable positions. Who knows, perhaps if she moves to a new ship then she could have La'an as a first officer whereas she would have to have Kirk on the Enterprise. I thought it was odd in TNG when the implied that Riker would automatically become the captain if something happened to Picard. It was the flaship so I would expect an experienced captain to take over rather than a brand new captain. The prompted first officer would be better off to get a less significant ship touring a safter area. This could be the thinking with Una although why they would give it to Kirk is not yet known. I assume he's going to do something spectacular and they just have to have him!
 
Could be they give it to Kirk because he's the type of captain they want to give the 5ym to, not because he's Kirk. There's a pool of candidates Kirk falls into (all who are young (relatively), experienced at the same level, well-rounded, etc.)
