Star Wars actually showed technology improving, as the fighters required hyperdrive rings in the prequel trilogy. Things were just shinier before the galactic war and oppressive empire, especially as the story was following royalty and Jedi heroes, not smugglers and moisture farmers.
I don't see TOS as being technologically less advanced than SNW in the slightest, the ship just looks more practical and less flashy, as you'd expect when twice the crew are packed into the same space. I mean the TOS bridge still performs all the same functions, just in a smaller room. The ship still has the transporter and the warp drive, which are 1 billion times more advanced than LED strips and widescreen viewscreens.
Okay the computer noises are bad, I'll give you that.
