They've ignored DS9 so much on NuTrek, so it was nice to finally have some representation.

I tend to think that the easter eggs referencing DS9 are more cynical, doing little to bring DS9 story elements into new episodes. For instance, Section 31 seems mostly divorced from what was established in DS9--its examination of the complexities of power--in order to introduce huge conspiracy theories.
I'll go so far as to say that the Bajoran tablet in the Picard teaser should be a bait and switch.
Sanctuary districts were basically stopped overs. Picard did little to address the injustices, and no narrative regarding refugees or immigrants has been resolved.
Okay, but this isn't the first time we've got that. We have previously seen appearances by Jeffrey Combs and J.G. Hertzler. We also got to see a holographic recreation of Odo in PROD using archive audio.
I don't think VOY got a "whole slew" of them. They got Janeway on PROD, Seven on PIC, a Chakotay cameo on PROD and a Paris cameo on LD. TNG is the only one I would describe as getting a "slew," since they're all coming back.
Meanwhile, DS9 has gotten more representation in modern ST than ENT, which as near as I can remember hasn't gotten any actors coming back except Combs.
You’re right. It’s extremely unlikely (like less than 1% chance) that we’ll ever get a continuation of DS9 like TNG is getting, or like Voyager is rumored to be getting (and already has in a way with Prodigy). So if not a full on continuation, then guest appearances similar to what we got this week will suffice.
Arguably, most fans were satisfied that the story of each series had ceased to evolve. Even Discovery didn't do much to change that despite continuing the Spock story. ST:Picard broke the status quo in a significantly by bringing back legacy characters from several series. Now it is no longer a complete pipe dream to ask for a Sisko or TPol or Porthos series, just a matter of vociferously advocating for one.

Why no representation of Star Trek VI in Nu-Trek? Where's Genital Knees and Shapeshifter woman? Where's the bunk beds and tea cups? Where's my Colonel Worf spinoff series?
Starfleet uses Naval ranks, not Army ones. Were he at equivalent rank, Worf would be either a commander or a captain.
It's an interesting question though. Why are these analogies drawn from the Navy, and not the army or the airforce? Why are starships 'ships' and not 'craft' or 'vehicles'?
I could understand the idea of large, (semi-)autonomous vessels with a localized command structure on board of them to lead to associate in that direction, but our real-life space craft (with tiny crews) are nothing like that, and we still often call those 'spaceships'.

There was no need to directly address the issue of Sanctuary Districts in PIC because the Bell Riots were just months away.
Ships that fly in space are still ships, so naturally a spacegoing fleet would lend itself well to Navy-style ranks.
Calling them ships makes sense to me. They are traveling through a dangerous environment, often for months and sometimes for years, with the only thing they can count on being what they bring with them.
Airplanes are flown for hours, sometimes days in some extreme cases (with air to air refueling), but they are dependent on ground support for everything from navigational beacons to maintenance, and in the short term.
