yes, this was one the very few things that I didn’t like: I found it too convenient and all in all unnecessary.

Yes. She joins Starfleet later. Now, in SNW, she's a civilian on exchange from the research facility. They did this as an excuse to have her on the show without breaking canon that she was a civilian researcher and only joined up with Starfleet after Korby's disappearance.

her ID card that Harry Mudd stole in Mudd's Passion says that at that point, she is a lieutenant

Some have speculated her blue collar and lack of rank insignia indicated she was a civilian in TOS. Presumably the other blue collar nurses were civilians, too.

the shiny fabric matched McCoy's lab tunic, which also lacked rank insignia - so both were probably just their sickbay work clothes

We see black collar nurses, too. McCoy had the black "turtle neck" under his smock which mimicked the black collar.
 
Kelvin Timeline McCoy's medical smock closely resembled Prime McCoy's as well as M'Benga's, just a much lighter blue.

So it's possible that as of SNW, Christine has already met Korby?
 
She knew him in 2261, so them meeting could happen in less than two years' time in-universe if it hasn't already.

Yeah but that doesn't seem too likely unless they are writing her off the show pretty quickly. My guess is they're already together, if not engaged (maybe an episode this season/next season where they get engaged), and his disappearance in season 3 results in her signing up with Starfleet officially and becoming a perm member of the E crew.
