Nothing you posted here 'defys' canon.
"Defies". Uh, yes it does. It was established in "Amok Time" that Spock and T'Pring hadn't seen each other since they were betrothed as children and Spock made it clear that the marriage had been arranged, thus no need to "propose marriage". Intimacy among Vulcans was also shown to be such a taboo that Spock could hardly talk about it with Kirk and it wasn't talked about among the Vulcans, but in "Strange New World", we just toss that pon farr-crap wayside and have Vulcans mate whenever, show affection in the open and even to outsiders!
On dr. Boyce, I was corrected that the show does take place ten years before "The Cage" (EDIT: But that can't be the case?). As far as Chapel is concerned, "Strange New Worlds" is apparently set in 2258 and Chapel joined Starfleet after Korby disappeared in 2261 (and was assigned the
Enterprise in 2266).
There are also a lot of other minor things. Just look at Pike's quarters (and with that strange fireplace). In "Relics", Scotty burst out that "In my day, not even an Admiral would get quarters this large." and neither in "The Cage" or in TOS did Pike or Kirk have such expansive quarters. Even worse is the moronic genome altering shot given to the away team in the first episode. In TOS, prosthetics etc. were used. And the transporter being used to "dress" the away team doesn't make much sense either as the away team had to dress in the old-fashioned way before beaming down in TOS. Also, the "Voyager" episode "Flashback" established that replicators didn't exist in the TOS era, but just as in "Discovery", it was ignored here.
We know the Enterprise NX-01 encountered the Gorn, but the first official encounter was in 2267 ("Arena").
Then I think Kurtzman and Goldsman could very well read the TOS (and TNG) writer's bibles and look at small things such as "the viewscreen is not a window".
