It seemed to be the first time Spock and T'Pring had been together since both were seven. Of course since TOS never says that explicitly the SNW writers can run with it, but at this point I'm just glad they seem to be getting relatively minor things like T'Pring's hair right. It's a victory of a hundred small steps with these producers.
That was just a fan opinion much like the fan assumption that Spock was the first Vulcan in Starfleet Academy.
T'Pring was obviously following Spock's career, as she stated that Spock had become much known among Vulcans, "Almost a legend..".
As for Spock doing things off camera, in TOS S2 Journey To Babel" , tarek's wife Amanda makes the comment to spock that: "...you haven't come to see us in 4 years..."

So it's not like fans have seen every minute of Spock's life aboard the 1701 during his service in Starfleet. Amanda also makes the comment that the 'Vulcan way', " has kept Spock and Sarek from speaking as father and son for 18 years..."

And a lot of fans interpreted that to mean that Spock and sarek have never spoken to each other in that time; but I would posit they have spoken as colleagues and as needed a given situation at home or in Starfleet no, but they just haven't spoken directly as a father and son might be expected to; they've always kept it extremely formal.
Bottom line I don't think it's fair to infer that the only time Spock and T'Pring were ever together after the initial joining ceremony was when Spock showed up again on Vulcan to go through the Ponn Far ceremony. When T'Pring's image appeared on the Enterprise viewscreen, they knew they were both effectively in public, and therefore they kept to what was traditionally required, hence the lines they both recited.
Hell yeah, if they happened to show Spock and T'Pring speaking together in private on an episode of Strange New Worlds, it's hardly a Canon violation here.
