They couldn't get the church lights to work. This means their knowledge of basic electricity was lat 19th century. They were whisked away to a strange planet. All they had was the tech they came with and what they knew and were able to pass on. There is no way they have deep awareness of physics.It's also quite likely since it is stated that there were Scientists among those taken, that they are well aware of "Physics" and other Sciences.
But I got the impression that the Society as a whole had chosen to mostly forgo technological advancement in favor of a more Agricultural Civilization.
Their cultural stagnation seems very much self imposed.

DSC is still innovativeTo me, Trek is when the franchise is innovative, new and different. That is what "Discovery" was in Season One. Now, it's just bland and predictable for those fans who couldn't appreciate something new and different if they tried.
Like "The Orville", Season Two of "Discovery" has become a fucking yawn fest. If it's lucky, perhaps it'll become innovative before the end of the season.

It looks pretty clear that the DSC versions are modular just like the TOS versions.

They show it off in the props BTS video on the Season 1 home release, so it is possible yes. The gold part even pops up like TOS.
