Sarek is also a snob and wants to be on the right side of his peers, especially with the status he has in Vulcan society. He already has a son that he had to banish and that was a full Vulcan son. Perhaps in his peers social standing Sarek has 'bad genes' and as a descendant of Surak is letting his ancestor down. The only rebellious thing Sarek has done is marry a human, have a child with said human and raise Michael. However to be an effective politician he still needs his Vulcan peers respect. There are probably other like minded Vulcans like Sarek who either keep a low profile, live offworld or do not have his high social standing.When that one Vulcan asked Sarek to choose between his children he should have done what Spock did in the 09 movie. He should have replied with a polite "screw you" and go to the press or the future equivalent with it. He should have pointed out that the want to limit non Vulcans (not that Spock is completely so) in the Vulcan fleet to one instead of two people is against their IDIC philosophy and that it is also illogical to not accept the best students because of racism.
T'Pau is probably the only person letting the others not sack him outright for his Terran/Federation loving ways.
Expecting all Vulcans to follow the principle of IDIC is like expecting all Christians to live by the rules of love your neighbour and being shocked when they do not.
Another real world example: lynchings took place after church on Sundays....
