I guess multiple is not incorrect, but it's just two so far...This is far too soon to be having multiple characters from the original series showing up.

It should therefore be charting its own course, creating its own mythos and setting up its own universe as much as possible, that stands on its own merits. Maybe once that is achieved a few years down the line people like Mudd could be brought in. Now is not the time.

Three is a "few." Also, who cares if McCoy was a cameo? He was there in the first episode, and he was a recurring character from TOS.McCoy was a 30 second cameo. Sarek didn't show up until season 3.

Well, they were planning on having Harry Mudd on TNG season one, but then Roger Carmel passed away.
This isn't anything that excites me. Could be great, could be terrible. Just when I think of all the things they could've pulled from TOS, Mudd is pretty far down the list.
Also, let's not forget that the first regular episode of TNG after the pilot was a flat-out remake of a TOS episode.

Not to mention several early episodes of TNG were actually recycled scripts from the aborted "Star Trek II" television project that was to have continued the story of TOS' characters and plotlines.
