What would you like to see in the finale episode of Season 5?

I explicitly don't want Year One. Post TMP? Sure. I'd also like to be the king of all Londinium and wear a shiny hat.
I would love all the people on the SNW crew who want to faithfully replicate the TMP aesthetic to go over onto a post-TMP series. One that blends the tones of the 6 movies to give us something that was a bit serious 70s sci-fi, a bit Hornblower with spaceships, and a bit funny at times as well. Kind of like how Andor was faithful to the world of the classic Star Wars trilogy while also feeling very modern.

Even better if it's not about Kirk's crew, so they actually get to do something with the characters.

Could use the Ticonderoga sets for TOS bridge and other sets.
Yeah, no. Probably easier to rebuild (like they did for ENT) then try and do a modern shoot in HD Widescreen at a warehouse that really ISN'T a proper studio.
(Not to mention SNW S5 is already 100% finished with principle photography)

It's corny, cheesey, whatever you want to call it, but I want to hear Paul Wesley do the opening narration.

AFAIK they're not designed for proper filming though, like no sound proofing, light rigging and such.

It would also look silly.

At this point, even if they'd done any filming in Ticoderoga or the former STC sets in Georgia, word of that would've gotten out by now.

Allowing the extreme unlikelihood of that scenario, I would hope they'd bring lighting rigs to make the sets look less like sets for a fan film. Cuz nobody's gotten it right yet.

Would it surprise anyone if Season 5 was a jumping off point for a new Star Trek film with the SNW cast?
Yes.

If that were the case SNW S5 would have most likely gotten a full 10 episode order as opposed to 6 and having to argue the fact originally it was going ton be a streaming film to end the series.

New Streaming Trek is done for the foreseeable future; they're going to continue to leverage and license to other streamers on a rotating basis all the Trek they've produced and do at least one feature film (who knows when) that attempts to really reboot the Trek franchise in some way.
