Personal choice would be a remake of Elite.. that game had a very simple technology compared to today but i've wasted weeks and months on it and manually docking in a rotating space station still took skill (which is why the autopilot was the first thing to be bought when i could afford it).
I think everyone bought a docking computer to help them land in Elite once they were able to.
My favourite Elite experience was in Frontier: Elite II with the bigger scope, landing on planets, lots of different stations, being able to fly almost anywhere and attempt slingshot manoeuvres, and of course the notorious Newtonian flight model. Doing nuke missions was fun, though. 
I think the best current Elite clones would be a choice between Freelancer (a relatively old game now, but still popular) or the latest iteration of the X Universe games, currently X3: Terran Conflict (which puts a somewhat different spin on Elite but is still updated to this day). Of course, a proper update to Frontier is what I ultimately want.

I think we should return to the old days and give PC gaming back to those who could tell their expanded memory from their extended memory.

Win98 at least you could reboot in MS-DOS mode. *sigh*
