Definately Martok. I think part of the reason Worf looked up to Martok so much was that he was so much the emblem of everything that a Klingon should be in Worf's mind.
Kurn would be a good choice, but we know Martok a lot better than Kurn. I think Kurn was a lot more brooding than a typical "Klingony" Klingon. He wasn't the stick in the mud that Worf was, but he always seemed somewhat more reserved. Understandable, given his circumstances.
Worf had the Klingon ideals down solid. Khaless would have held him up as an example of what Klingons should be. He also would have called him a collosal bore, and hung out with Martok instead.
Gowron was the poster boy of everything that was wrong with 24th Century Klingon society. Ezri pointedly said as much, spurring Worf to challenge him.
