Toasted english muffin with chicken breast, bacon, char-grilled pepper, tomato, sauted red onion and avocado - topped with dijon mustard and mayonnaise. Tasted great! One tip with chicken breasts - bake for no longer than 25 minutes in a preheated oven (180C) and leave to rest for 5-10 minutes before cutting in. Delicious and juicy.
