What if they did a flashback and everyone looked 7 years older?
 
Because that is an in-universe issue. CBS can say that Picard has a mohawk, but on screen we can clearly see that he is bald, and that's that. It is a death of an author situation.

If they re-cast him with a mohawk, then that's what it is. Silly, sure, but still true.
 
True as in canon; yes. True as in prime; not necessarily.

Why do they have the power to determine what's canon but not what's in which timeline? Star Trek has contradicted itself time and time again and I've not heard fans claim that this indicated a new timeline; rather, they've contorted themselves into knots trying to show that it was in fact not contradictory, to ridiculous degrees.
