I like the reasoning that the Constitution I class is 442 meters.

Would be cool if the class and its subclasses were the same length in STO, so that we could kitbash the Discoprise with the Connie, Phase II, Refit etc.
 
I always found it interesting that people cling to the 289m size when it can only be inferred from a diagram barely glimpsed once in “The Enterprise Incident”, yet discount the size of a shuttlecraft in the hangar deck, which is too large to fit into a 289m ship, even though that is seen in multiple episodes and the only thing in TOS where there is any correlation between internal and external features.
We see it in multiple episodes but it was shot once.

I see the shuttledeck (both live action and -- WHEW!!! -- animated -- The TAS deck was HUUUUUUGE) as being the outlier. If that was the sticking point, sure, make the ship bigger. You're right, there is pretty much nothing until The Motion Picture where you can figure out a relative size.

But how big does the Enterprise have to be to accommodate that shuttle deck? I don't have precise numbers but guesstimating 1.5 to 2 times as large.

OTOH, people say that "We never really KNEW how big the ship was, onscreen, right?" But somehow people looked at the JJ-Prise and her successors and knew that was a bigger ship than we had seen before.

I believe @blssdwlf has the actual numbers, but I think it's closer to 1400 ft/425 m, which is about 1.4x and much closer to the SNW version (and I believe Drexler's Defiant cutaway from ENT).

Except when it didn't. There was not a consistent length from shot to shot.

I was wondering about that too. It would change depending on how big you think the shuttle craft miniature is supposed to be. 22' like the prop, 24' from dialog, or even 27' feet to fit the cabin inside

Yes on 1, maybe on 2, absolutely not on 3. IMVHO of course.

Based strictly on scaling the docking ports on the refit, how big does that shake out to be?
 
If you want it to be 442m, have at it.
If you want it to be 289m, have at it.

Ship scaling has ALWAYS been off in almost every series ( they got there head together for Enterprise.. the lone outlier) so, yeah. Keep on phasering the dead horse.

IMO, the TOS Enterprise would need to be around 371m long to fit the (original FX) TOS flight deck scaled to a 24' shuttle.
With a smaller 22' shuttle a 330m long Enterprise could fit it. Interestingly, if the alcoves and observation back areas for a 22' shuttle flight deck are removed you could fit the flight deck into a 289m Enterprise. So in my mind the guys making the miniature kinda got it right but didn't account for the alcoves and observation decks.

But, I do think a larger TOS Enterprise isn't a bad thing. More room to work with... :)

As for how things scale to like a docking port...

The larger Titan scaled to the Enterprise-A's docking port.

We just rewatched A Quality of Mercy. I'd forgotten that we actually see a shuttle leaving the shuttle bay. And it doesn't look like a tic tac. It actually fills the width of the doors more than the TOS shuttle would. (Which makes sense since the SNW shuttles are larger. Right?)

Yeah, the SNW shuttle is quite a bit larger than even a "27' TOS shuttle". This would imply that the SNW Enterprise is a bit larger than a 289m TOS Enterprise.

Looks like the windows are scaled 1:1 in the top pic, and 1:2 or 1:3 in the bottom pic.
