LET JADZIA AND EZRI INTERACT. Via Ezri's mirror-ritual, or a dream sequence, or something.

We would have still had Ezri's arc as " the new Trill who never signed up for a symbiont and got one anyway". It's just that we would have had said arc in Season 4, where it wouldn't have had to compete with the series' end game arc.
Beyond that this setup for a character could have provided arcs and plot bunnies for her character for the rest of the series, including a possible relationship with Jake at some point.

While I like the idea of Jake/Ezri, though she might have been a little old for him had she shown up in S4 (her about 25, him only 18).
 
But you're missing the important part; we would have had three less years of putting up with Jadzia (j/k...mostly. And I stress again this is nothing against Terry Farrel, just against Jadzia)

Jake was born in 2355, and though we don’t get an official age for Ezri, Startrek.com says she was born in 2354, making her a year older.
 
Not necessarily. Wesley was about to turn 16 when he took the first test for entering Starfleet Academy in "Coming Of Age", which means he likely would have started either a year later or while he was 16. So 21 is possible. (I graduated high school at 17. My birthday occurs only a couple weeks after the school year is over.)
 
Since every species will age and mature differently then there's no sense in judging them by human standards--Ktarians for example age very rapidly, for all we know by the time they're 18 Earth years old they could be deemed to be middle aged.

Nicole de Boer is eight years older than Cirroc Lofton. In contrast, Jill Sayre (who played Mardah) is just two years older than Lofton. Even though de Boer looks young for her age, so does Lofton. I don't think a pairing would have looked right on screen. I tried to find a picture of the two of them together, but this was the best that I could do.

Truth be told, given all that they had to do with Ezri and concerning the Dominion war, properly developing an Ezri centered romance would have been too time consuming. Ezri/Bashir was a ship that made sense, but few people would care about. A little like 7/Chakotay, really.

Ezri/Bashir makes sense, but for the wrong reasons. It seems to me like it’s really the Jadzia in Ezri that loves Bashir and Bashir mainly loves the Jadzia in Ezri.
 
Well, they're not engaged or anything. They agreed to be friends, then kissed in an elevator, recreating a scene from an old movie I saw once. We can decide for ourselves (for now) how they ended up. Maybe Ezri will follow in Seven and Mirror Ezri's cherchez la femme footsteps, and Bashir will... I don't know, stay single and wind up as DS9's Crazy Cat Man.
 
There are probably more important things that could have improved the show if changed, but honestly, the first thing I think of is the montage in the last episode. That needed Jadzia in it. So if I could change one thing, it'd be to include her in that montage.

I agree. There are probably more important things, but that was a glaring omission and should have been an easy fix.
