You'll get no argument from me. I think the painting of Deneb IV looks great in HD!
My personal stance on the originals vs. new shots issue: I have no problems with new shots if they're necessary to achieve the same quality level as the rest of the material has, but otherwise prefer the originals to be retained, simply because I find it interesting in itself to "uncover" the originals in all their details. I.e. for me it's less about "don't alter the originals because that's morally wrong!", and more "if you throw away the original I'll never get to see how it really looked". I want to learn more about the shots I already know. That said, I do also sympathize with the "preserve the hard labor of the original production" POV.

I haven't watched TNG for a long time, but I have watched DS9, and I can remember a lot of noticable music scores for the episodes.

Seems silly to be okay with them replacing effects shots but then belly-aching because some folks would like to have a 16:9 option.
I've recently watched two sitcoms that were cropped from 4:3 source to 16:9 and both looked fine.
You know what, I would find a change in music completely acceptable. TNG's music after season two is so mind numbingly low key. It's like someone humming variations on a song they're not sure they know that well.
It's funny that you don't notice how important music is until you watch to only scene in all of TNG cut to a soundtrack: The symphony scene in Sarek. It's moving because the music is telling us how to feel about the images we're seeing. The crew must have had a blast with that as it would be the first and only time they did it.

I hear ya! I am lucky enough to have become close personal friends with one of the producers of TNG, and to hear some great little anecdotes from that time.
There are lots of scores from Season 2 through the end of Season 4 that are great! Its after Ron Jones got fired that there must have been some form of production meeting that resulted in the musical score being neutered from then on.

To be honest, though, TNG was never as operatic as TOS where the music was a character in the room. Other than some of the stuff in EAF and BoBW I really can't remember any TNG music.
Well the best advice I can give is to 'keep an ear out' whilst watching the TNG blu-rays and maybe you will be pleasantly surprised?
