Well, physics for one? Not in terms of visual fidelity of course, just in practical terms.There is no reason why they shouldn't.
Like I said, the headpiece presents a significant challenge for anything other than standing/sitting/kneeling in place. It's basically a big lump of foam latex and/or silicone attached to a person's head with glue.
There's a reason the practical Twi'lek headpieces almost always include a headdress with a chinstrap. The headdress helps hide the join (especially if it moves unnaturally) and the strap helps keep the damn thing in place so it's not dependent on a relatively small surface area of adhesive.
You can't really do that with Ahsoka's design since the headdresses worn by her or any togruta we've seen don't feature chinstraps, and even if they did the piece with the montrals would be much more top heavy, making it more difficult to hold in place. It probably also doesn't help that the ears would need to be covered, making your actress effectively deaf.
So yeah, I think the headpiece is going to have to be a digital/practical hybrid arrangement. Probably with silicon pieces on the forehead to cover the eyebrows, and maybe the edges of the headpiece where it joins to the face and neck so the headdress has something physical to interact with, and some lekku with motion tracking markers to save on physics simulation.
They'll probably have a full practical bust made up on set for lighting reference though.
And if nothing else, she seems to have the signature poses down.
