Even if the timing allowed for Uhura to lose her memory of T'Pring, it still doesn't make it vaguely not-weird that Spock ponders a childhood photo of her. ;)

(Yes, plenty of reasons/excuses as to why he might. I reserve the right to lightly mock it.)
 
So if you consider production order to be the 'canon' TOS Order, then Uhura had her mind wiped before Amok Time. Which could explain why she doesn't recognize T'Pring.
If we feel a need to explain that, the fact that Uhura and T'Pring have never shared a scene on SNW is more than sufficient an explanation. Well, never shared a scene which wasn't a dream, that is.
That was one of the lesser works in ERB's canon. Spider-fucks of Mars.
Definitely one of his more underrated works.

I have a hard time buying that the lead Communications officer doesn’t have knowledge of pretty much everything that goes on, on ship.

She isn’t Chekov cleaning the pisser on Deck 78 when Khan happens to walk by.

I'm sure Uhura has heard of T'Pring and the hijinks. She's just never met her face to face. So she can react to seeing her with "She's lovely, Mister Spock. Who is she?"

Why would Uhura have any memory of T''Pring to begin with beyond possibly the name, which Spock states to her as he's watching the Viewscreen in answer to her question in TOS S2 Amok Time?

Uhura was never on the ship, or she was off somewhere when to T'Pring showed up on the Enterprise in any Strange New Worlds episode involving T'Pring.

And in TOS S2 Amok Time; Christine Chapel is silent and says nothing when to bring appears on the Viewscreen during that same scene.

I'm not arguing that Uhura knows T'Pring at all. I was going with the flow of the conversation that asserted that she didn't need to avoid her all this time due to The Changeling. (Which also, as pointed out, doesn't help.)

I have a hard time buying that that would be a communication's officer's job. Security? Sure. But Communications? Besides, in Spock Amok, the entire time that T'Pring is on board, Uhura is tied up with helping Pike with negotiations and is not shown at the communications station at any time during then episode. I don't know how long T'Pring was on-board following Level Five Transporter Accident, but it was implied to be a short trip that was already on Enterprise's route. And with Spock in recovery mode, I don't see her socializing with the crew much at any rate. And those are the only two times that she's been on Enterprise. She wasn't on the bridge when T'Pring was on the view-screen in The Serene Squall.
 

Toronto-based virtual production and animation studio Dark Slope has acquired virtual production assets from Pixomondo, the Sony-owned VFX and virtual production company, along with select assets from Pixomondo's Vancouver operation. Dark Slope announced the deal last Tuesday....

Equipment acquired by Dark Slope includes LED stages built for Star Trek: Discovery, Star Trek: Strange New Worlds, and Star Trek: Starfleet Academy. When the company announced its Toronto virtual production build in 2020, it billed the facility as "the largest in the world."
