Also, it is also a canon violation too, as even McCoy still didn't understand too much about Vulcan and Klingon health, years after the event of this series.
Nor dumb plot points.So either McCoy was a stupid doctor in TOS, because he was surprised about Spock's blood color, confused on how to help a Klingon in Star Trek VI, or humans - Aliens interaction should be more limited in SNW era.

Even in real world today, we have specialist who care only on heart, lung, kidney, skin, bone, etc. And in order to study one of them, they need years. maybe almost 10 years of their life. So it is impossible to fully understand and master multiple species anatomy and health problem, and fix them. No human can do it, even in 24th century.

Unless you have multiple doctors who know about each species onboard.That's why TOS Enterprise was more realistic. It is better to have a single species Starship, because it is easier to maintain.
You should also aware, than some Alien anatomy may spread virus like Covid 19 naturally that can endanger human crews health. or human breath can endanger another species health. So for me, a single species like TOS Enterprise is the most realistic show.
With all the things that the TNG Era of Trek changed or ignored from TOS, why all of a sudden is it a problem that some things are also being adjusted or overlooked in the Kurtzman era?

TAS has already shows there were plenty of other aliens on the Enterprise besides Spock in the TOS TV series era. As for McCoy's ignorance of Vulcan anatomy, meh, no one writing those early episodes knew that someone would be dissecting the scene in context to other episodes, other TV shows and movies fifty years later. Early days weirdness and all. As for him knowing nothing about Klingon anatomy in TUC, that was already problematic when the movie was released since he clearly knew enough about Klingon anatomy in Trouble with Tribbles that Darvin was a Klingon based only on his heartbeat and body temperature.
