And then when they do a show with amazing CGI ability, they end up rushing it and use 3 variants of the same ship (I'm looking at you Picard S1E10)

I doubt it. Deadlines always happen.Oh, absolutely (but hence my "rushing it" comment). But with enough time you can do so much more with CGI.

The yellow desktop model even had a tiny robot from the anime Xabungle glued to the underside.
IIRC the production model has a larger scale version of the same robot too.

It does, although it has more of the normal proportions than the desktop model, which had a ‘super-deformed chibi-fied’ version.
