By the end of DS9 everyone is either defeated or now holding hands. The alpha quadrant is a less interesting place drama-wist.
Are you kidding me? Off the top of my head...
- Hundreds of ships were lost; thats thousands of lives and there were a lot more casualties. There's a lot to go with there in many different angles from personal stories to effecting Starfleet as a whole.
- Bajor now has a free pass to the Federation: Cue other members and worlds jumping through hoops getting frustrated.
- The fall of Cardassia has left a power vacuum in their region.
- Major worlds were attacked. I doubt Betazed is happy and ready to hold hands after being less protected than Vulcan.
- After 2009's future backstory, Romulus is dead. Thats a whole can of world to explore with a LOAD of options.
- Voyager got access to the Borg transwarp network. Can they access it again and how far can they go with it?
There's a lot more than that, but that era in just building it's back story has many different things to build on, to change and to tweak for a completely new era.
Ok this is pretty ridiculous. Why set a show in a certain era if you have no intention of making it match that era aesthetically?

If you want to make up your own uniform designs, and have your characters say all sorts of awesome swears, and use cool touchscreen tech; then feel free to make up your own era. If you want to play with the Pike-Kirk Era; then have the balls to make it look and feel like the Pike-Kirk era.

None of us can really comment until we see it, but from the STLV(?) reveal it seemed that they picked that era so they could play with that style. It's a foregone conclusion we won't see the cage uniforms - we'll see something simple, bright and matching the 60's, but without the velour and a few modern tweaks.
I'd assume something closer to the current film franchise, Beyond-ish in clothing style, than anything else with TOS as a template. Recreating the 60's exactly would be the least creative route available.
