If it's a changeling, they could potentially try to immitate other changeling's transformation process to look like them as a "Fake Out".Unless this is a new type of changeling.

If the Dominion Changelings look like Golden Goo, and this sand like Changeling tries to mimic the Dominion Changelings to implicate them, there could be multiple layers of deception as to which Changeling is guilty in the room.

Its more likely they just changed/update the SFX for the transformation sequence for the Dominion Changelings. They'd still end up in a gellatinous state like in Ds9, but the actual transformation might end up more sand like (similar to programmable matter - everyone is copying this effect).
Maybe drinking liquid latinum is a Lurian rite of passage or something.Lurians are all bald in the 32nd century when DS9 established Morn was only bald because of liquid latinum poisoning, so yeah, the newer series seem to be looking for visual nods and connections even if they don't make perfect sense.
